4 Recipes I’m Dying to Try

It’s certainly no secret that I’m not a huge cook. I make a few amazing dishes here and there, but other times, some just fall completely flat. However, I don’t let this stop me from hoping that I will one day be as great at cooking and baking as my mother. Pinterest aids in this dream, with delicious sounding recipes I probably have no right in trying to succeed at, but I digress. Today’s blog post is a roundup of four recipes I’m absolutely dying to try. They’re all super easy too, a must for anything I attempt to tackle in the kitchen! Pineapple Matcha Smoothie

I’ve technically already made this and you might’ve caught it on my Instagram story last week but I’m counting it because I’m already dying to make another. I started with a pineapple matcha smoothie from Daily Harvest, which I’ve been trying out lately and love. Essentially, DH smoothies are organic frozen fruit and vegetables in a cup ready to be blended once a liquid is added. Super quick and easy for anyone on the go. I used unsweetened vanilla almond milk (but coconut milk would be delicious too) and blended it in my Ninja. I also added in a scoop of Vital Proteins Vanilla Collagen Peptides, which I’m seriously obsessed with in my smoothies lately, and Optimum Nutrition Whey Protein Powder in Vanilla. Lemon Garlic Pasta

This recipe has been on repeat lately because of its simplicity and the little number of ingredients required. I typically always have a lemon, minced garlic, cheese, and some sort of pasta in my kitchen making it so easy to quickly throw together, especially since it doesn’t require an additional sauce of any kind. Next time I make it, I plan on added either shrimp or chicken for a boost of protein. I imagine garlic bread would be great alongside this one too. Truly a great weeknight meal. I find leftovers heat up nicely too if you add just a splash of water to keep the noodles from drying out.

Campfire S’mores Brownies

S’mores and brownies have to be one of the best combinations I’ve ever heard of. This recipe from the lovely people over at Miss Jones Baking Co. calls for a box of Organic Brownie Mix along with marshmallows, graham cracker crumbs, and additional chocolate chunks to make campfire s’mores brownies. My favorite part about the Miss Jones mixes is that they’re entirely organic. Hello, guilt-free! Maybe not, but we can at least pretend, right?

Buffalo Chicken Bowls

In my apartment, the obsession with anything buffalo chicken is seriously real. It’s flavorful and seriously addictive! I’ve made this recipe for buffalo chicken sliders countless times for Austin and I and we keep coming back to them. Partially because of the fact they called to be eaten on the most delicious buns ever, King’s Hawaiian ones. So, when I saw this recipe for buffalo chicken bowls, I couldn’t help but pin it. It’s pretty healthy too with corn, beans, avocado, tomatoes, and more. I’ll definitely be making this one soon!
